Seymour Papert covers this in Mindstorms [1], p 111. He explains that the most common "bug" that prevents people from performing 3-ball juggling is following one ball with the eyes.
Mindstorms by Papert transformed my understanding of how to program, and how to teach programming. The book discusses how children acquire mental models of computers and logical processes.
Maybe not exactly the book that you might be interested in but I read Mindstorms by Papert and I think his work on education through the use of computers was groundbreaking. Very interesting book.
Since this was discussed here recently (in sad circumstances), I'll just say that everyone who might be involved with kids, either as an educator or parent needs to read this book.
